If my main character, Sunny, was a cookie, this would be her. Raw, Vegan, Bright, with a huge splash of can’t-miss-it tart lemon! Her signature cookie is perfect for a healthy spring treat. The recipe and photo is straight from Sunny’s favorite, real-world, raw vegan blog – ADDICTED to VEGGIES and it’s Awesome! I made these as a gift to my good friend and fellow author, Bethany Maines.
